EN Continuing my raspberry-strawberry and just berry-berry stories, today it's the time for super quick, delicate and just melting in your mouth muffins with blueberry. I found this recipe here, but in English it looks like this:
Ingredients:
- flour - 250 g
- baking powder - 2 tbsp. (flat)
- fine granulated sugar - 4 tbsp.
- salt - 0.5 tbsp.
- egg - 1 pc. (large)
- kefir - 220 ml
- melted butter (or softened)- 50 g
- fresh blueberries (black currant, berry mix) - 250 g
- powdered sugar - to taste
- sour cream - to taste
- butter for greasing the molds
Grease the inside of 12 small muffin molds (metal or ceramic) with butter. Sift flour, mix with baking powder, salt, add sugar. Whisk one egg with kefir in a bowl, pour the melted butter (or add softened). Mix in the flour quickly not paying attention to lumps. Add blueberries and stir. Spread out the dough into molds, sprinkle with powdered sugar (or I sprinkled after baking). Can be done differently: put blueberries on the bottom of the molds, then the dough, then blueberries again, and dough. Bake in the oven for 20 minutes at 200 º C. Cool a bit and remove from the molds. Serve muffins warm with sour cream, sprinkled with powdered sugar (if you didn't do it before baking).
